JOHNNY CAKE/FRIED DUMPLINGS AND MACKEREL

Try our delicious Johnny Cake and Mackerel recipe. A tasty Caribbean tradition!

INGREDIENTS:

fried dumplings and mackerel
  • 2 cans Grace Classic Mackerel in tomato sauce (Buy Now)
  • 1 tsp Grace Scotch Bonnet Pepper Sauce (Buy Now)
  • 1 Pack Johhny Cake Mix (Buy Now) *For fried dumplings
  • ²/₃ cup of milk *For fried dumplings
  • 3 cups oil *For fried dumplings
  • 1 medium tomato, diced
  • 1 stalk escallion, chopped
  • ½ medium onion, thinly sliced
  • 1 tsp black pepper
  • ¼ cup vegetable oil
  • 2 tbsp ketchup

    DIRECTIONS FOR FRIED DUMPLINGS:

    • In a medium bowl, add Johnny cake mix. Add the milk gradually to form a
      dough.
    • Let dough rest for 5 minutes before frying.
    • Heat vegetable oil in a non-stick skillet over medium heat.
    • Divide the dough into smaller pieces and form small balls and pressed gently in the palms of your hands to flatten the dough.
    • Fry in oil until golden brown on each sides. Drain on paper towel to remove excess oil.

    DIRECTIONS FOR MACKEREL:

    • Heat vegetable oil in a non-stick skillet over medium heat.
    • Sauté onion, escallion and tomato for 3 minutes. Add ketchup and
      scotch bonnet pepper sauce to pot and continue frying for 2 minutes.
    • Combine tomato, escallion, onion, sweet pepper, black pepper, salt and
      mix well.
    • Open 2 cans of grace mackerel in tomato sauce and add to vegetable mixture with black pepper and cook for another 4 minutes.
    • Serve with freshly fried Johnny cake.
