Try our delicious Johnny Cake and Mackerel recipe. A tasty Caribbean tradition!
INGREDIENTS:

2 cans Grace Classic Mackerel in tomato sauce (Buy Now)

1 tsp Grace Scotch Bonnet Pepper Sauce (Buy Now)

- ²/₃ cup of milk *For fried dumplings
- 3 cups oil *For fried dumplings
- 1 medium tomato, diced
- 1 stalk escallion, chopped
- ½ medium onion, thinly sliced
- 1Â tsp black pepper
- ¼ cup vegetable oil
- 2 tbsp ketchup
DIRECTIONS FOR FRIED DUMPLINGS:

In a medium bowl, add Johnny cake mix. Add the milk gradually to form adough.

Let dough rest for 5 minutes before frying.

Heat vegetable oil in a non-stick skillet over medium heat.

Divide the dough into smaller pieces and form small balls and pressed gently in the palms of your hands to flatten the dough.

Fry in oil until golden brown on each sides. Drain on paper towel to remove excess oil.
DIRECTIONS FOR MACKEREL:

Heat vegetable oil in a non-stick skillet over medium heat.

Sauté onion, escallion and tomato for 3 minutes. Add ketchup andscotch bonnet pepper sauce to pot and continue frying for 2 minutes.

Combine tomato, escallion, onion, sweet pepper, black pepper, salt andmix well.

Open 2 cans of grace mackerel in tomato sauce and add to vegetable mixture with black pepper and cook for another 4 minutes.

Serve with freshly fried Johnny cake.
