JAMAICAN VEGGIE CHUNKS

An authentic flavourful, protein rich stew starts with soya veggie chunks starts that have been seasoned and stewed with colourful vegetables for flavour.

INGREDIENTS:

  • 1 Pack Plain Soya Vegan Chunks

  • 1 pack Maggi Season-Up All Purpose Powered seasoning
    (Buy Now)
  • 1 pack Maggi Season-Up Chicken Powered Seasoning
    (Buy Now)
  • 1 tbsp Grace Browning
    (Buy Now)
  • 8oz Grace Classic Coconut Milk
    (Buy Now)
  • 5 Ocho Rios Pimento berries, Crushed
    (Buy Now)
  • 1/2 tsp Scotch Bonnet Pepper Sauce
    (Buy Now)
  • 2 stalks escallion, chopped
  • 2 cloves of garlic, crushed
  • 1 medium onion, chopped
  • 1 sprig of thyme
  • ¼ Yellow Bell Pepper
  • ¼ Green Bell Pepper
  • 1 tbsp sugar
  • ½ cup vegetable oil
  • 2½ cups of water
  • Salt to taste

    DIRECTIONS:

    • In a medium bowl, add two cups water to cover the vegan chunks and allow to soak for 15 minutes.
    • Drain water and pat dry with paper towel to remove excess water.
    • Add browning, Maggi All Purpose Seasoning, Maggi Chicken Seasoning and mixed well.
    • Heat vegetable oil in a pot and add onion and garlic, stirring continuously to prevent burning.
    • Add the seasoned vegan chunks to the pot and stir-fry for 10 minutes.
    • Add chopped carrots, bell peppers, thyme, escallion, pimento berries and scotch bonnet pepper sauce, and stir well.
    • Add half cup water, sugar, coconut milk and salt if needed.
    • Reduce heat to medium, cover pot and allow to simmer for 15 minutes or until a liquid is
      reduced to a thick rich sauce.

    COOK TIME: 30 MINUTES

    TOTAL TIME: 45 MINUTES
