Jamaican Sweet Potato Pudding

  • 1 can Grace coconut Milk (Buy Now)
  • 200g Grace Fine Enriched Yellow Cornmeal (Buy Now)
  • 4 Large Sweet Potatoes
  • 500ml Water
  • 60g raisins
  • 500g Brown Sugar
  • 60g Unsalted Butter
  • 60g Plain Flour
  • 2 tsp Mixed Spice
  • 2 tsp Vanilla Essence
  • 1/2 tsp Salt
  • 1 tbsp Unsalted Butter


              • Preheat oven to 165°C.Grate Sweet Potatoes and set aside.
              • Combine the Grace Coconut Milk, Water, grated Sweet Potato and mix well.
              • Add all remaining ingredients (except for the 1 tbsp unsalted butter) and mix well.
              • Scrape mixture into a well-greased baking pan and dot with the remaining Unsalted Butter and and bake for 1.5-2 hours until set.
              • Remove from the oven and allow to cool before slicing and serving
