Then you need to try these delicious, fragrant curried butter beans, cooked until tender with an assortment of healthy vegetables.
INGREDIENTS:

1 can Blue Mountain Butter Beans

1 Grace Coconut Milk, mixed with 8oz of water

1 teaspoon JCS Curry Powder

1 teaspoonp Grace Scotch Bonnet Pepper Sauce

1 teaspoon Grace Caribbean Traditions Ginger Garlic Pimento Seasoning

4 Ocho Rios Pimento berries, whole
- 2 sprigs thyme
- 1 stalk escallion, chopped

1 teaspoon garlic, chopped
- ½ medium onion, chopped

¼ yellow bell pepper, chopped
- ¼ red bell pepper, chopped

1 medium tomato, chopped
- 1 medium carrot, chopped

3 tablespoons olive oil

1 teaspoon black pepper
DIRECTIONS:

In a medium skillet, add olive oil and curry powder.

Sauté onions, escallion and garlic until they are soft. Add tomato, carrot,thyme, pimento berries, bell peppers and scotch bonnet pepper sauce.

Add butter beans and cook for 7 minutes, stirring occasionally.

Add 8oz of coconut milk and season with ginger garlic pimento seasoningand all purpose seasoning.

Add black pepper and salt to taste.

Cover and allow to simmer on medium heat until most of the liquid isabsorbed, and sauce is thick and creamy.
