Jamaican Callaloo Rice is an easy, healthy and filling dinner. Made from white rice and callaloo, this combination creates a dish that can be enjoyed at lunch or dinner.
INGREDIENTS:

2 tablespoons unsalted butter

1 can JCS Callaloo, drained

1 teaspoon Grace Caribbean Traditions Ginger Garlic Pimento Seasoning

1 teaspoon Grace Chicken Seasoning

1 tsp Grace Scotch Bonnet Pepper Sauce

1 tbsp Grace All Purpose Seasoning

4 Ocho Rios Pimento berries, whole
- 2 sprigs thyme
- 1 stalk escallion, chopped
-
1 teaspoon garlic, chopped
- ½ medium onion, chopped

¼ yellow bell pepper, chopped
-
1 medium tomato, chopped
-
1-pound White Rice
-
3 cups water
-
½ teaspoon black pepper
DIRECTIONS:

In a medium pot, melt butter and sauté escallion, garlic, onion, bell pepper, tomato, thyme, pimento berries and scotch bonnet pepper sauce for 3 minutes.

Add Callaloo and cook for 5-7 minutes, stirring continuously.

Wash rice in a large bowl 2-3 times or until water runs clear

Add rice to callaloo mixture and add 3 cups water to cover rice.

Season pot with black pepper, all purpose seasoning, chicken seasoning and ginger garlic pimento seasoning.

Lower heat to a low flame when the water is reduced from pot and allow rice to steam for another 25-30 minutes, or until the rice grains are soft and tender.
