This flavorful, rich Jamaican Brown Stew Chicken is the most comforting Caribbean style stew you can imagine!
INGREDIENTS:

3 Chicken Legs and Thighs

1 tbsp Grace Browning

1 tbsp Grace Fish & Meat Sauce
-
1 tbsp Grace Chicken Seasoning
-
1 tbsp Grace All Purpose Seasoning
-
6 Ocho Rios Pimento berries, Crushed
- 1 stalk escallion, chopped
- 1 medium onion, chopped
-
1 medium tomato, diced
- 1 cup vegetable oil
-
¼ scotch bonnet pepper
-
½ bell pepper, chopped
-
1 medium carrot, chopped
-
1 tablespoon sugar
-
¼ cup ketchup
-
½ cup vegetable oil
-
2 cups of water
DIRECTIONS:

Trim to remove any excess skin or fat from chicken and cut chicken into small sizes.

Wash chicken thoroughly and drain excess water from chicken.

Season chicken with browning, fish and meat sauce, chicken seasoning, all purpose seasoning, escallion, onion, tomato, thyme, scotch bonnet pepper, bell pepper and carrot. Cover and allow to marinate in refrigerator overnight for best result.

Using a tablespoon or large spoon, pour batter into heated oil 1tablespoon at a time to form small individual fitters and fry until goldenbrown on one side, then turn and continue frying until the other side isalso golden brown.

Heat oil in a pot and separate seasoning from chicken. Place chicken in pot one at a time to fry.

Fried the chicken for 5 minutes on one side, then turn the chicken on the other side and fry for another 5 minutes.Pour off excess oil, leaving about 2 tablespoons in the pot. Add the seasonings that were set aside, with ketchup, 2 cups water, and sugar.Stir well and cover pot and cook well for approximately 25 minutes. Check to see when the water is reduced to a thick gravy and the chicken is fully cooked.
