Jamaican Blue Draws is a classic Jamaican dessert. The banana leaf gives a really nice flavor. If banana leaves are not available you can use parchment paper or aluminum foil. Blue Draws is also known as tie-a-leaf or Dukunu (Duckunoo or duckanoo)
INGREDIENTS:
- 4 cups Grace cornmeal (Buy Now)
- 4 cups Grace Coconut Milk (Buy Now)
- 1 cup(s) flour
- 2 cup(s) raisins (optional)
- 2 teaspoon(s) nutmeg, grated
- 1/2 teaspoon(s) salt
- 2 cup(s) brown sugar
- 2 teaspoon(s) vanilla essence
- 1 piece(s) quailed banana leaf
- INGREDIENTS FOR ORANGE SAUCE:
- 1 large orange
- 1/4 teaspoon(s) orange rind (zest)
- 1 tablespoon(s) corn flour
- 4 tablespoon(s) sugar
- 1 cup(s) water
- 1 tablespoon(s) rum (optional)
DIRECTIONS:
- In a bowl, combine Cornmeal, flour, raisins (if used) nutmeg and salt. Make a well in the center.
- Combine sugar, vanilla and Coconut Milk, and mix well until dissolved.
- Pour liquid into dry ingredients and combine to a dropping consistency.
- Drop by tablespoons on pieces of quailed banana leaves.
- Make a parcel and tie with cord or strips of banana bark.
- To Serve: Serve with an Orange Sauce
- ORANGE SAUCE:
- Grate orange to obtain rind and extract juice, set aside.
- Mix corn flour, sugar, orange rind and water and pour into a sauce pan and bring to a boil; stirring constantly until clear.
- Remove from flame add the orange juice and rum and mix well.
